Job Brief
The Sausage Smoker is responsible for operating and tending to specialized food processing equipment, including kilns and smokers, to create high-quality smoked sausage products. Responsibilities
- Operate and monitor smoking equipment to ensure optimal cooking and flavor infusion.
- Maintain cleanliness and sanitation of work areas in compliance with food safety regulations.
- Adjust temperature, humidity, and smoke levels according to product specifications.
- Inspect and test smoked products for quality control, ensuring they meet company standards.
- Perform routine maintenance on equipment to ensure efficient operation and minimize downtime.
- Document production processes and maintain accurate logs of smoking times and temperatures.
- Collaborate with team members to streamline production and enhance overall efficiency.
- Adhere to all safety protocols and company policies throughout the smoking and production process.
Requirements
- High school diploma or equivalent; relevant culinary or food processing certification is a plus.
- Proven experience in food processing, preferably within a meat or sausage production environment.
- Strong technical skills with food smoking equipment and related machinery.
- Knowledge of food safety regulations and best practices in meat handling.
- Ability to work in a fast-paced environment and manage multiple tasks effectively.
